Eggfree Apple and Cranberry Cake

3pm and Springtime, is there a more delightful duo? What better way to celebrate and enjoy the season than with a delicious cake, and a relaxing cuppa. We’ve got just the recipe that can be whipped up in no time (even if you’ve run out of eggs), and is the perfect companion to enjoy with your favourite blend and  few friends. So pop the kettle on, and let’s get baking!  🍏

Serves: 4 people

Preparation time: 10 minutes

Cooking time: 30 minutes

Ingredients: 

  • 5 green apples
  • 150g flour
  • 30g cranberries (and additional for garnish)
  • 1 tsp baking powder
  • 80g sugar
  • 50g melted butter (and additional for baking tray)
  • 250ml milk (almond, soy or whatever milk is your preference)
  • 1 tsp vanilla extract (optional)
  • Coconut flakes, walnuts, cinnamon (optional)

Method:

  1. Preheat the oven to 180°C
  2. Butter the bottom of a medium baking dish
  3. Peel the apples, cut them into small cubes. Spread them evenly across the bottom of the baking dish. Scatter cranberries across the baking dish. Meanwhile, mix the flour, sugar, vanilla and baking powder in a large bowl
  4. Add the milk, melted butter until you get a smooth batter
  5. Cover the apples and cranberries with the batter and bake for 30 minutes or until golden
  6. Let it cool down before removing from the mould 
  7. Garnish with additional cranberries, and/or other toppings, like toasted coconut, walnuts and a sprinkle of ground cinnamon
